He cooks, and he expects you to respect this, including the limitations: He cannot do larger parties, there is not much of a table service, and the menu is short. Given these limitations, I can only say that the food is outstanding, and by far better than anything else in the Gold Country. It is a unique experience to visit his place. He uses sous-vide technology in combination with a wood-fired oven, he is intuitive rather than recipe-driven, and his sauces are divine. Order entrees, not just pizzas.
